Bernard Lynch of Bywell Smokery now has the smoke house in Wark in the North Tyne Valley. He produces a great range of smoked foods, including salmon and kippers. He also smokes products from other producers at the market so bacon from Ravensworth Grange Farm beomes smoked bacon on Bywell’s stall.
A trained chef, Bernard also cooks bacon and venison burgers and sells them ready to eat at the market. In partnership with the Battlesteads Hotel, also in Wark, he runs occasional smoking courses too.
